you should stick with the wine but if that is out of the question I would say beef broth as I assume you are having it with a meat of some sort. Use a little less broth than wine as there is no alcohol to evaporate in the broth....Hope that helps.

If you don't have wine, use a little beef stock or broth...and 2 tablespoons of VINEGAR (if you use vinegar add a pinch of sugar). If you have several vinegars, evidently a wine based vinegar is the best...especially sherry based vinegar)
(Don't use more than the 2 tablespoons or your sauce will be too sour.)

Use beef broth and a little grape juice or pomegranate juice. That's what I do and it turns out yummy!

Dry sherry goes really well with mushrooms if you have it. Parsley also goes well with mushrooms as does thyme.
