Okay I have never tried butternut squash before, and I saw a butternut squash soup at the store the other day. The reason I am even curious is because the same manufacturer makes some soups that I really like...so I figured that as silly as this sounds, I'd ask you folks what you thought.
Its actually a safeway selects brand, so maybe some of you have tried it?

I make it myself in winter (the same recipe can be used with pumpkin)
The skin is rather tough so I microwave it until tender than scoop the flesh out of the squash.
Add it to a vegetable broth with 2 chopped leeks and 2 or three potatoes, cook until all are tender, than put in your food processer or blender and make a cream soup`...You can also add a small pot of cream at this point to make it richer and smoother.
If you like spicy foods...you may add a little curry powder for an oriental flavour, or mixed mexican spices for a latin american flavour. Add a few chopped corander leaves on top...It will give it an added flip and looks pretty garnishing the bowl.

Butternut squash soup is terrific! I don't use Safeway Select brands (yuck!), but try it homemade. Very hearty, it will really warm your tummy on a cold rainy day. I like to serve it with some oven-toasted hazelnuts and a little fresh ground nutmeg on top, and it's really good.

I once made a butternut squash soup at home, and it was really nice. But then i bought one that was already made and it was so gross. It was like all thick, like baby food. But hey, some people like baby food, i guess...

i never heard of the soup but i know a saucey mashed potatoe style is incredibly yummy for me. my mom makes it by baking the squash like a potatoe then spooning out the squash into a bowl adding about 2 or 3 teaspoons of brown sugar and about 4 to 6 tablespoons of butter or margerine. then mixing it til it has a consistancy of mashed potatoes. hmmmm hmmm good
