Whether it's the latest Nissan Maxima ad on TV (the one talking about CVT) or the latest Mazda CX-7 color brochure from the dealer, you see these darkened (body colored) plates with strange numbers... do they mean anything? Why must they be displayed?

They want the car in the commercial to be an "Anywhere" car. Not just New York or California, so they make the tag as obscure as possible for the photo-shoot.
"They are not legal tags"

I also find myself looking at the tags on the car in commercials and TV. I have also noticed the greyed out (gray, for you nibblers) or color matched tags. (colour for you limeys and Canadians) .

The plates in commercials are an similar color because the motor vehicle purely purely so that they don't detract from the look of the motor vehicle. and considering commercials are shown nationally, which plate may you position on a motor vehicle? If i became living in ny in spite of the indisputable fact that the plates on the motor vehicle were from Arizona or Michigan, i'd (subconsciously) dislike the motor vehicle if I had a difficulty about that different state. Or i'd imagine the motor vehicle became overseas if i did not comprehend the plate color.

They use a fake plate that goes well with the cars body color. They also can't use a real plate so must use a fake one.
