Chicken Forestiere

Ingredients
Qty. Measurement Description
3 tablespoon all-purpose flour
1/4 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
1/2 pound boneless, skinless chicken breasts, trimmed
1 tablespoon vegetable oil
2 tablespoon shallot, or onion, minced
2 cup mushrooms, sliced
3/4 cup low-sodium chicken broth, defatted
1/2 cup dry white wine
1 tablespoon fresh parsley, or chives, chopped

Cook:20 Min (cooking time) Preparation
Combine two-thirds of the flour, the salt and pepper in a shallow dish. Dredge chicken breasts in the flour mixture. Heat two-thirds of the oil in a nonstick skillet over medium heat. Add chicken and cook for 3 to 4 minutes per side, or until golden on the outside and no longer pink inside. (Reduce heat to medium if chicken is browning too quickly.) Remove and keep warm.
Add remaining oil to the skillet. Add shallot (or onion) and cook, stirring, for 10 to 20 seconds. Add mushrooms and saute for 1 to 2 minutes, or until softened and browned. Add remaining flour and cook, stirring for 30 seconds. Pour in broth and wine and bring to a boil, stirring. Cook for 5 minutes, or until slightly thickened. Reduce heat to low and stir in parsley or chives. Season with salt and pepper to taste. Return the chicken to the pan and heat gently.

The soup mixes in the flour add flavour to the chicken. You can add whatever soup mixes you like and adjust the flavour to your taste .

3/4 cup milk
2 cups all-purpose flour
1 (4 2/3 ounce) package Italian salad dressing mix
1 package onion soup mix (optional)
1 packet dry tomato soup mix
4 lbs whole chickens, cut into pieces
oil (for frying)
pepper


In a small bowl, mix egg beat and milk together and set aside.
In a shallow dish or bowl, mix together the flour, salad dressing mix and soup mix.
Dip chicken pieces in egg/milk mixture, then in flour mixture and roll until well-coated.
Heat oil in a large skillet over medium high heat and fry chicken in skillet, turning often, for 25 to 35 minutes or until juices run clear.


This recipe is my nannys passed to my momma and then to me. I would just watch them in the kitchen as a child. Nothing was really ever measured, just a little of this and that.....

4-10 mixed pork chops



Put the flour, salt and pepper in a paper bag or ziplock bag.
Put a couple of pork chops in and shake the bag well set aside.
Heat the oil in a skillet when the oil is hot put the chops in and fry about 5 to 10 min.
each side.
Turn chops every 2 to 3 min.
Place on paper towels to drain.
I put them in a warm oven until they are all done.

Stuffed chicken breasts served with spaghetti. All done on the stove top. Take 4 chicken breasts and cut a pocket in each. Stuff with mozzarella cheese and 4 slices of pepperoni. Brown in oil on both sides. Add 2 cans rotel diced tomatoes. Simmer for 25 min. Serve with spaghetti and garlic bread. This is a delicious recipe.

A pork roast in a crock pot comes out delicious. Crockpots are the best for cooking most meats, makes them moist and delicious. Just throw in onions, garlic, and whatever seasonings you like. Works OK for chicken, but chicken gets a bit too moist, I think...like chicken & dumplings texture.

2-4 thick pork chops
1/2 teaspoon salt
1/2 cup chopped mushrooms
1/4 cup tomato puree
3 cloves garlic, finely chopped
1 teaspoon fresh basil leaves or 1 1/2 dried basil
Garlic-flavored oil (or plain olive oil)

In a small bowl, mix salt, mushrooms, tomato puree, garlic and basil. Set aside. In a frying pan, brown the chops in oil. Baste each chop with mixture; add remaining mixture to pan for extra flavoring. Turn the chops over during cooking, baste with "pan drippings". Check for doneness; cook until done. [Add oil to pan, as needed, to prevent drying.]

Serve with buttered noodles topped with Parmesan cheese; a green salad with oil & vinegar dressing [dinner rolls or croissants, optional]; melon for dessert.

You can also use the same mixture (with the olive oil added to it) to BBQ pork chops. Baste chops while grilling. Use enough oil to prevent drying.

ummm honey for chicken or pork ur gonna have to use a crock pot or a oven.......but once u cooked it let it soak for about 10 20 minutes in barbeque sauce.

How about....

1) Lemon Chicken (Chinese recipe)

Ingredients:
3 skinless, boneless chicken thighs
3 tablespoons oyster sauce
1 teaspoon sesame oil
1 teaspoon white sugar
1 egg, beaten
salt and pepper to taste
1/8 cup corn flour
1/2 cup water
3 tablespoons white sugar
1/2 lemon, juiced
1 (3.4 ounce) package instant lemon pudding mix water as needed...

Steps:
To Marinate: Place chicken in a nonporous glass dish or bowl. In a small bowl mix together oyster sauce, sesame oil, sugar, egg, salt and pepper; pour mixture over chicken, cover dish and marinate for at least 1 hour.

Dip marinated chicken in cornflour and sautee in a large skillet until cooked through (juices run clear) and color is a nice, golden brown.

To Make Sauce: Bring 1/2 cup water to boil in a small saucepan; dissolve sugar in boiling water, then add lemon juice and thicken liquid with pudding mix.

Cut chicken into bite size pieces and pour sauce over all and serve.

2) Sweet and Sour Pork (Chinese recipe)

Ingredients:
1 pound pork butt, cut into 1 inch cubes
1 teaspoon salt
1/4 teaspoon white sugar
1 teaspoon soy sauce
1 egg white
2 green onions, chopped
1 quart vegetable oil for frying
1/2 cup cornstarch

1 tablespoon vegetable oil
3 stalks celery, cut into 1/2 inch pieces
1 medium green bell pepper, cut into 1 inch pieces
1 medium onion, cut into wedges
white sugar to taste
salt to taste

1 cup water
1/4 teaspoon salt
3/4 cup white sugar
1/3 cup apple cider vinegar
1/4 cup ketchup
1/2 teaspoon soy sauce
1 (8 ounce) can pineapple chunks, undrained
2 tablespoons cornstarch
1/4 cup water

Steps:
Place cubed pork in a medium bowl, and season with 1 teaspoon salt, 1/4 teaspoon sugar, and 1 teaspoon soy sauce. Mix in the egg white and green onions. Cover, and place in the refrigerator at least 1 hour.

Heat 1 quart oil to 365 degrees F (185 degrees C) in a large, heavy saucepan or deep fryer. Coat the pork with 1/2 cup cornstarch, and fry in the heated oil about 10 minutes, until evenly browned. Drain on paper towels.

Heat 1 tablespoon oil in a wok over medium heat. Stir in the celery, green bell pepper, and onion, and cook until tender. Season with salt and sugar. Remove from heat, and set aside.
In a large saucepan, mix 1 cup water, 1/4 teaspoon salt, 3/4 cup sugar, apple cider vinegar, ketchup, and 1/2 teaspoon soy sauce.

Bring to a boil, and stir in the cooked pork, celery mixture, and the pineapple chunks with juice. Return to boil, and mix in 2 tablespoons cornstarch and 1/4 cup water to thicken. Cook until well blended.
