My suggestion is a big buffet. I know it's a lot of work, but why not make him a few different choices so that way you can't go wrong.
I would include fried rice w/ stir-fried veggies, pizza, fries, macaroni salad & potato salad, and some nachos w/cheese.
It really isn't as hard as it sounds, you can buy the pizza, fries, salads, and nachos ready made. Then all you have to do is cook the rice, fry the veggies, and melt the cheese for the nachos.

For starters, you can make garlic pita crisps, with some nice chutneys/ salsas.
Apricot/ cream cheese stuffed chicken breasts with an apricot
nectar and sherry sauce.
Fanned potatoes (thinly slice potatoes but not all the way through, generously pour melted butter, paprika and salt, then bake in the oven for an hour or so, every now and then spooning the butter mix over), honey glazed carrots (butter and brown sugar melted and poured over cooked, drained carrots), some other vegetables cooked in a different way to which he is used to.
A nice crisp vegetable salad, with apple and orange to compliment the chicken. With a vinagerette dressing, or Italian dressing, nothing too thick.
Then for dessert make a cake, or chocolate coated strawberries.
If you want to go all out, and are confident, creme brulee is fantastic.

I think you can cook Grill Chicken for him and make some salad as this can make the dish less oily and look nice.
