Oatmeal Pancakes
Ingredients
(10 servings)
1 1/2 c Quick cooking OR
1 1/2 c Old fashioned rolled oats
1 tb Whole wheat flour
1 tb Baking powder
1 1/2 c Skim milk
2 Egg whites
1 tb Vegetable oil
Instructions
In blender,process dry ingredients until oat flakes are fine; transfer to medium bowl.Mix liquid ingredients lightly in small bowl;add to dry ingredients.Stir only until dry ingredients are moistened.Let stand 5 minutes.Preheat griddle.Bake on hot griddle, turning with spatula when edges get firm.Makes 10 medium pancakes.
Scotch Oatmeal Waffles
Ingredients
(2 servings)
1 1/2 c Elam's Scotch-style oatmeal
1/4 c Brown sugar
2 1/2 ts Baking powder
3/4 ts Salt
1 c Milk
2 Eggs
1/3 c Cooking oil
Instructions
Combine first 4 ingredients in bowl;mix.Combine and mix milk, eggs and oil.Add liquids to dry ingredients;mix.For each waffle, pour 1/2 of batter (1 1/3 cups) into preheated 9" square waffle iron.Spread over grid at once.Close iron;bake until done and nicely browned.Serve hot with butter and maple syrup,honey, applesauce or preserves.Yield: 2 - 9" waffles or 8 - 4" waffles.
Oatmeal-Apple Muffins
Ingredients
(12 servings)
2 oz Egg Beaters
1 c Skim milk
3 ts Polyunsaturated oil
1 c Whole wheat flour
3 ts Baking powder
1 c Uncooked rolled oats
1 c Raisins
1 c Peeled, chopped apples
Instructions
Preheat oven to 425 degrees F. and grease muffin tins. Mix egg whites, milk, and oil in bowl. Add dry ingredients and mix. Fold in raisins and apples. Place batter in muffin tins; fill each 3/4 full. Bake about 20 minutes or until centers seem dry.
Oatmeal Blueberry Muffins
Ingredients
(12 servings)
1 1/4 c Oatmeal
1 1/4 c Flour
1/3 c Sugar
1 tb Baking powder
1/2 ts Salt
1 c Milk
1/4 c Vegetable oil
1 Egg; beaten to blend
3/4 c Blueberries
2 tb Sugar
2 ts Cinnamon
Instructions
Preheat oven to 425. Lightly grease 12 muffin cups, or use paper liners. Combine first five ingredients in large bowl. Mix milk, oil and egg in another bowl. Add to the oatmeal mixture and stir just until moistened. Fold in blueberries. Divide batter among muffin cups. Combine 2 Tbsp sugar and 2 tsp. Cinnamon. Sprinkle over muffins. Bake until tester inserted in center comes out clean. About 15 minutes. Remover from cups. (These can be prepared 1 day ahead. Store in an airtight container). Serve warm or at room temp. Apple Crisp
1.Peel, core and slice 4 apples.
2.Stir into the sliced apples, 3 tablespoons cornstarch, 1 tablespoon lemon juice, 2 teaspoons cinnamon, 1/2 cup brown sugar, and 1/2 teaspoon nutmeg.
3.Put the apple mixture into a greased 8 by 8 inch baking pan.
4.Mix 1/4 cup butter, 1 teaspoon cinnamon, 1 cup uncooked oatmeal and 1/3 cup brown sugar until the mixture is crumbly. You can use a pastry blender for this.
5.Spoon the crumbly mixture over the apples and bake at 350 degrees for 30 minutes.

BLUEBERRY OATMEAL MUFFINS
* 1 1/4 cups quick cooking oats
* 1 cup all-purpose flour
* 1/3 cup white sugar
* 1 tablespoon baking powder
* 1/2 teaspoon salt
* 1 cup milk
* 1 egg
* 1/4 cup vegetable oil
* 1 cup blueberries, rinsed and drained
Combine oats, flour, sugar, baking powder, and salt. Mix in milk, egg, and oil; mix just until dry ingredients are moistened. Fold in blueberries. Fill greased muffin cups 2/3 full with batter.Bake at 425 degrees F (220 degrees C) for 20 to 25 minutes.

Chocolate Peanut Butter Dreams
Makes about 6 dozen cookies
1-1/2 cups firmly packed brown sugar
1 cup creamy or chunk-style peanut butter
3/4 cup (1-1/2 sticks) margarine, softened
1/3 cup water
1 egg
1 teaspoon vanilla
3 cups Oats (quick or old fashioned, uncooked)
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1-1/2 cups semisweet chocolate pieces
4 teaspoons vegetable shortening
1/3 cup chopped peanuts (optional)
Preheat oven to 350°F. Beat brown sugar, peanut butter and margarine until fluffy. Blend in water, egg and vanilla. Add combined oats,flour and baking soda; mix well. Shape into 1-inch balls. Place on ungreased cookie sheets. Using bottom of glass dipped in sugar, press into 1/4-inch thick circles. Bake 8 to 10 minutes or until edges are golden brown. Remove to wire racks; cool completely.
In saucepan over low heat, melt chocolate pieces and shortening,stirring until smooth.* Top each cookie with 1/2 teaspoon melted chocolate; sprinkle with chopped peanuts. Chill until set. Store tightly covered.
NOTE: *Microwave Directions: Place chocolate pieces and shortening in microwavable bowl. Microwave at HIGH 1 to 2 minutes, stirring after 1 minute and then every 30 seconds until smooth.

You can put 3/4 cup of oatmeal in a blender w 2 cups of milk and ice and 3 teaspoons o sugar w any knd of fruint u like... it is really good. i use papaya

find a good oatmeal pancake recipe. you don't notice that you substitute about half the flour with oatmeal. tasty.

i like granola.
my mom makes one that only cooks for 20min in the oven.
let me know if you want the recipe.
I eat it as a crumby snack, i put it in my yoguart to add crunch, and of course with milk and fruit.
