If you can get past the fact that it uses veal, this is the best meatloaf recipe that you will ever find:
Serves 6-8, prep time 10 min, cook time 1hr 50min.
2 lbs. Meatloaf mix (equal parts beef, pork, and veal - you can get it at most grocery stores and YES it makes all the difference in the world)
1 T vegetable oil
1 onion, chopped fine
2 cloves garlic, minced
1/2 t dried thyme
1/2 cup ketchup
1/4 cup packed light brown sugar
4 t cider vinegar
2 eggs
1/2 cup milk
2 t dijon mustrad
2 t worchestershire
1 t salt
1/2 t pepper
1/4 t tabasco
2/3 cup crushed saltine crackers or 1-1/3 cup fresh breadcrumbs
1/3 cup minced fresh parsley
(T=tbsp, t=tsp)
Heat over to 350F, middle rack.
Heat oil in a skillet, add onion and cook 5 min. Stir in garlic and thyme, cook 15 seconds until fragrant, set aside to cool.
Mix ketchup, sugar, vinegar and set aside.
In a seperate bowl, mix eggs, milk, dijon, worchestershire, salt, pepper, tabasco.
Mix meatloaf mix, crackers, parixture, and egg mixture until evenly blended and mixture doesn't stick to the bowl. If it sticks, add more milk. Mix it with your hands, it's much easier.
Put meat mixture onto a foil-lined baking sheet and shape into a loaf. I use a pyrex loaf pan and just dome the top of the meat over. Brush it with 1/2 the ketchup mixture, and bake for 45 minutes.
After the 45 min, brush with the rest of the ketchup mixture and bake until the center temp reaches 160F, or about another 15 minutes or so.
Let cool for 20 minutes, slice and serve.
Seriously, try it...you'll thank me.

Meatloaf and Stuffing Dinner
This is a complete meal in the crockpot, meatloaf with potatoes.
INGREDIENTS:
* 1 package instant boxed stuffing mix - including seasoning packet
* 3 eggs
* 2 pounds lean ground beef
* 1 cup ketchup
* 2 or 3 cans whole white potatoes, drained
PREPARATION:
Mix dry stuffing mix and seasoning packet with eggs and lean ground beef; place in slow cooker. Turn heat to LOW; cook for 6 to 8 hours. Add ketchup to top of meatloaf and canned potatoes around all around the loaf.
Cook for 1 to 2 hours longer.

1/2 and 1/2 ground hamburger and ground pork
egg/s
bread crumbs
instant rice (or oatmeal)
onion
garlic
ketchup (or spaghetti sauce for extra zing - or salsa)
tomato - chopped fresh or canned (keeps it moist)
any seasonings in the cabinet
mushrooms - chopped
I always say I put everything but the kitchen sink in mine. The key is to not have it too "wet" or add too much of the bread crumbs. You can add as many things as you want, or as little as long as you have the meat, eggs and some type of "bread" (ie breadcrumbs, rice, oatmeal)
hint#1: the smaller you chop items, the less "crumbly" your meatloaf will be.
hint#2: after I got married, my husband taught me how to cook it in the microwave (bachelor life). I wasn't too keen on the idea, but I was surprised at how well it worked - just cook slowly on a lower power and cover with wax paper. (keeps the kitchen from getting too hot in the summer!)

Amish Meatloaf
INGREDIENTS:
2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon
1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

Grandma's Meatloaf
INGREDIENTS:
1 1/2 pounds ground beef
1/2 pound ground breakfast sausage
1 cup Italian seasoned bread crumbs
1 onion, chopped
1 (4.5 ounce) can mushrooms, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 egg
DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine the ground beef, sausage, bread crumbs, onion, mushrooms, soup and egg. Mix together well and place in a 5x9 inch loaf pan.
Bake at 375 degrees F (190 degrees C) for 50 minutes.

Meatloaf
2.5 - 5lbs. hamburger or ground turkey (depends on how many you're feeding)
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato paste plus 1 1/2 cans water, mixed
Topping
1 can tomato paste and 1/2 can water, mixed
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, and pork rinds. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

1 (14.5 ounce) can diced tomatoes, drained
1 1/2 cups shredded mozzarella cheese

In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

2 cups bread crumbs, fresh
2/3 cup cold water
1/8 teaspoon thyme
1/4 cup parsley, chopped
1 whole egg
1 teaspoon Worcestershire sauce
1/8 teaspoon salt
Soak bread crumbs in cold water and set aside. Sauté diced onion until tender. Set aside and allow to cool. Preheat oven to 350 degrees. In a large bowl, combine ground beef, ground pork, onions, granulated garlic, and bread crumbs mixed with water. Mix well and add remaining ingredients. Mix well and mold into loaves. form in either loaf pans or a meat pan with sides high enough to hold juices. Bake for 45 minutes to 1 hour.

Ann's Sister's Meatloaf Recipe
INGREDIENTS:
2 pounds lean ground beef
2 eggs
1 1/2 cups dry bread crumbs
1/4 cup ketchup
1 teaspoon monosodium glutamate (MSG)
1/2 cup warm water
1 (1 ounce) package dry onion soup mix
2 slices bacon
1 (8 ounce) can tomato sauce
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl combine the beef, eggs, crumbs, ketchup, MSG, water and soup mix. Mix well and spoon mixture into loaf pan. Cover with 2 strips of bacon, then cover with tomato sauce.
Bake in preheated oven for 1 hour.

500 g sausage meat, i onion finely chopped, dash of soy sauce, dash of worchestershire sauce, dash of tomatoe sauce, 1/2 cup of breadcrumbs. Mix all together. Put large piece of aluminium foil onto oven tray and brush with oil. Place mixture onto it and shape into a loaf. Mix up a mixture of tomato sauce and soy sauce and brush all over top and side of loaf, then wrap up with the foil. Bake for 1 hour at 180c. I also put sultanas in my meatloaf, i reckon it makes it even better but some people don't like sultanas.
