Dairy products such as cream or milk reduce the acidity because they are opposite in composition.(Alkaline). Sugar is a acid neutralizer. People put sugar in their marinara sauce to cut the acidity. Yes the acidity is their but the sugar binds to it and creates a moister acid for you to consume

lime (chalk) takes away acid
sugar makes it sweeter so that you dont taste the acidity
