Lima Bean Bake
INGREDIENTS:
2 cups dried lima beans
4 cups water with 1 teaspoon salt
1 tablespoon minced parsley
1/4 teaspoon pepper
1/2 pound salt pork, rind removed, cut in 1/4-inch pieces
1/4 cup finely chopped onion
2 tablespoons finely chopped celery
1/4 cup finely chopped carrot
PREPARATION:
Soak beans in water overnight; drain. Put 4 cups of water and salt in a large kettle or Dutch oven; simmer beans for 30 minutes. Drain and reserve liquid. Mix beans with parsley and pepper and transfer to a greased 7x11-inch baking dish.
In a heavy skillet, fry salt pork pieces until browned.
Remove all but about 4 to 6 tablespoons of drippings; add onion, celery, and carrot. Sauté vegetables until onion begins to brown. Spoon onions and carrots over the beans. Evenly pour hot bean liquid over beans just to cover. Sprinkle drained browned salt pork over top. Bake for 60 minutes at 350°, until beans are tender. Serve hot, with cornbread.
Serves 6 to 8.

Butter Bean Salad
2 cans butter beans, rinsed and drained, 15 ounces each (can substitute other beans)
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 red onion, chopped
2 cloves garlic, peeled and minced
1 teaspoon ground cumin, 1/3 palm full
2 tablespoons extra virgin olive oil
1 large lemon, juiced
Coarse salt and freshly ground black pepper
Combine all ingredients in a medium bowl. Toss to coat beans and vegetables evenly in dressing.

Barbecued Lima Beans (Usda)
Yield: 24 Servings
Ingredients
2 lb dry lima beans -- small
3 qt boiling water
8 oz salt pork -- finely diced
1/4 c instant minced onion
3 tb prepared mustard
2 ts worcestershire sauce
2 ts chili powder
1/8 ts garlic powder
2 cn tomato soup, condensed --
1 (10 1/2-oz each)
1/4 c vinegar
1 1/3 tb brown sugar
2 c bean cooking liquid
Instructions
Line four 8x8-inch baking pans with heat-resistant freezer wrap. Allow
enough extra wrap to fold over top. Use one pan for each six servings
or one-fourth of the recipe. Do not line pans for food to be served
without freezing.
Add beans to boiling water; return to boiling. Boil beans 2 minutes;
then soak beans 1 hour (or overnight, if preferred).
Cook beans slowly until tender, about 45 minutes. Drain; save 2 cups
cooking liquid. Brown salt pork with onion. Mix remaining
ingredients with salt pork mixture. Add beans; stir gently. Pour
one-fourth of mixture into each baking pan. Spread mixture to avoid
air pockets.
Scalloped Lima Beans
Yield: 4 Servings
Ingredients
2 tb butter or margarine
2 tb flour
1 c milk
2 ts grated onion; or onion
-flakes
1/4 ts celery salt
1/4 ts pepper
1 tb pimento; chopped
1 cn dried lima beans
1/2 c seasoned bread crumbs
Instructions
Place butter in a 1 quart casserole. Microwave at high (100%) until melted,
30 to 45 seconds. Stir in flour. Blend in milk, onion, celery salt, salt
and pepper. Micrwave at medium high (70%) untij slightjy thickened, 3 to4
minutes, stirring twice during cooking time.
Stir in pimento and lima beans.Spnnkle bread crumbs over top. Microwave at
medium high (70%) until heated, 4 to 5 minutes. Makes 4 servings.
Lima Beans Smitane
Ingredients
(4 servings)
10 oz Lima beans, frozen
1 ea Pimento
1/2 c Sour cream
3 tb Chives
1/4 ts Garlic powder
1/4 ts Salt
1/4 ts Pepper
Instructions
Cook limas as package directs. Dice pimento and chop chives. Drain limas. Lightly toss all ingredients together.

Maybe you could mash 'em and use 'em for paste. Wallpaper the bathroom or something.
Ew...lima beans are the worse! Ugh! :)
