That gray film is just part of the natural fat of the fish. It's totally edible and pretty tasy too. It's ok to eat it that and the skin...even though it has a little fishy taste to it. When I grill my salmon, I think it actually tastes pretty good. However, if you are poaching the salmon, I'd recommend you peel the skin off and maybe cut some of the fat film from the bottom. Fried salmon skin is actually a delicacy in sushi restaurants... :)

I think the grey stuff you are referring to is the skin, which is absolutely deliscious.

If you love salmon, make an effort to find fresh, wild salmon. It is no comparison to what you buy in the market.

Farm raised salmon is born and raised on a farm...no flavor.

Wild caught salmon is born and raised on a farm, and then released into the ocean to be caust...no flavor.

Wild salmon is from the ocean. It's fighting rough waters and predators. The meat is dense and oily, if that makes sense. It is so full of flavor, you don't need to add butter, or dill or anything.

Yes, I think the grey stuff is the best part. It's full of the salmon oil. It's just part of the meat of the fish. You can eat the skin too, just be sure it doesn't have scales. It's good if you fry it until it's crispy, it's not so good when it's limp.

The gray stuff is coagulated protein. It won't kill you, but I wouldn't eat it. The skin is edible.
