Im making this crazy chicken recipe, really easy and you put it over orzo (@ least I do). Cut up skinless, boneless chicken decent sizes... a brest into 3 pieces or so. Saute them in the oil of sun dried tomatoes, along with some diced onion, and a bit of garlic. In the same pan add a cup or so of chicken broth. I then add cut up sun dried tomatoes, some cut up black olives, a 1/2 stick of butter or so,mushroom (if ya want) and cover it and let it simmer for a bit, so the chicken gets really tender. I also blanch some fresh spinish and toss that with the orzo. To serve, put the orzo on the plate, top with chicken and the sause and sprinkle with feta cheese. Its wonderful!!!!!!

Two days ago I started a couple pounds of salmon marinating and last night I put it in the smoker, that will be my appetizer (not the whole 2 pounds).
I will serve it with a nice crab bisque.
For the main course I have 1/2 pound of tuna that I have encrusted with black pepper and is currently in the fridge. I will serve that with a small portion of wasabi caviar (masago caviar soaked in wasabi). Along side that will be garlic crusted potatoes.
Desert will be my old standby, butterscotch creme brule.
I will also be opening a bottle of Gewurztraminer to wash it all down and probably a congac about an hour after desert.

Walmart has made a cookbook full of recipes with ingredients that they carry. I'm going to reheat leftovers from a recipe from that book. It has diced tomatoes with garlic and onion, rotini pasta, french style green beans, and chicken in it. All is mixed together and tastes really good. We added seasoned salt as we liked.

This sounds strange, but is actually VERY good! Coat chicken breasts with mayo and cover with bread crumbs...bake 425 for 30 minutes! YUMMY and super easy. Have instant mashed potatoes and baked beans with it!

Well for me tonight I am having a chicken sandwich. Nice easy and quick. I buy the patties in a bag, thaw it in the microwave and fry it up. For sides I am left over baked beans and some cole slaw. Nice and simple! :)

It's kinda rainy & icky here, so I thought I'd make a spicy chicken & black bean soup with grilled cheese sandwiches. Yum!
