It's COFFEE. Arbuckle's coffee was a staple on trail drives because it came in wooden cases and wood was a rare commodity back then. The cases could also be used for storage when empty. The chuck wagon chefs loved Arbuckles Coffee.

It was a derogatory nickname word used by residents of the 19th century American West towards those from the East who were unaccustomed to the rough lifestyle of the old West. Similar to the old usage of the word "dude" as in a dude ranch.
