Usually, Chinese restaurants don't use the system where each waiter/waitress is assigned to a section of tables. In Chinese restaurants, you have all the waiters/waitresses in charge of all the tables in all the restaurants. That's why, in keeping up with the needs of the customers, they tend to cut corners here and there and seem "rude".

I eat at Chinese restaurants a great deal. Even bring my own chopsticks. I have yet to encounter a rude wait staff. I guess I'm just a fortune-ate cookie.

Actually, they are not rude.
Since English is probably their second language, they are probably pretty careful about appropriate English Grammar and Usage.
Personally, I squinted and frowned when I read your question. I wasn't being rude; I was trying to understand your mutilated English...
Your wait-staff are probably not rude... they are just too polite to tell you how painful your Grammar is.

I don't believe "all" Chinese waitresses are rude.
