Well.. I grill pork chops ocasionally and will be doing so again this SAturday when friends visit.. I usually get 8 pork chops and I use the following ingredients.. (not just one spice) in the preparation beside oil:
1 1/2 c Onion, chopped fine
2 ts Garlic, minced
1 c Water
1/2 ts Cumin
1/8 ts Paprika
1/2 ts Turmeric
1 Bay leaf
I find them delightful and hope you will also..

Cajun Spice Rub Recipe
Use on pork or chicken.
3 tablespoons paprika
1/2 teaspoon cayenne pepper
1 tablespoon garlic powder
2 teaspoons thyme
2 teaspoons oregano
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon cumin
1/4 teaspoon nutmeg
Mix all ingredients and use on your favorite cut of pork or chicken.

I like fajita seasoning, it's like garlic, onion, salt and pepper all mixed together. You can get with the regular spices, or visit the Mexican food section and you will find it cheaper in that section. It also has better flavor.

Make a marinade of apricot preserve (1 jar), soy sauce(couple of T spoons), and cayenne pepper ( to taste). Slather while cooking and right before presentation. A HUGE HIT!
