Cheesy Nachos with Guacamole Salsa

Cook Time: 20 minutes
Yields: 4 servings
1 (8-ounce) bag baked tortilla chips
1 (15-ounce) can black beans, drained and rinsed
4 ounces goat cheese, crumbled
2 ounces low-fat Cheddar, shredded
1/4 cup sliced scallions
Guacamole Salsa:
1 cup frozen corn kernels, defrosted
1 chipotle chile in adobo sauce
1 small red onion, chopped
2 cloves garlic, peeled and finely chopped to a paste
1 lime, juiced
Salt and pepper
2 large vine-ripe tomatoes, cored and chopped into large chunks
1 avocado, peeled, pitted, and diced
1/4 cup chopped fresh cilantro leaves
Nachos:
Preheat oven to 350 degrees F.
On an oven-safe platter, spread half of the tortilla chips. Top with half of the black beans and half of the goat cheese. Top with the remaining tortilla chips, black beans, goat cheese, and the Cheddar. Bake for 20 minutes, or until warmed through and the cheese has melted. Remove from heat and top with the scallions and serve with the Guacamole Salsa.
Guacamole Salsa:
In a mixing bowl, combine the corn kernels, chipotle pepper, onion, garlic, lime juice, salt, and pepper. Stir until combined and then fold in the chopped tomatoes, avocado, and cilantro. Serve immediately.

Whip out the sour cream and salsa, it's guacamole time!
mash up an avocado, if it's ripe you can do it with a fork
cut up a tomato into a fine dice
cut up half an onion, again into a fine dice
Chop a handful of cilantro (literally take the bunch you get from the store and get a handful of leaves)
Mix all these ingredients together.
Now, some people like to put a finely diced jalapeno in their guacamole. I like this, but I also like a few shakes of Tabasco, if I don't have a jalapeno. I like a few shakes of Tabasco anyway, though, so add it for some more flavor and heat.
salt and pepper to taste, and serve with corn chips. Yummy!
I also eat avocado with a little salt sprinkled on it right out of its skin with a spoon, or spread it on toast in the morning instead of butter.
A trick to getting the pit out: get a sharp knife. Cut the avocado in half, the long way. Take the knife and tap the pit with the knife, then twist the knife, and the pit pops right out!

Ingredients
Yummy Guacamole
2 California avocados
3 Tbsp fresh lemon juice
3 Tbsp chopped tomato
2 Tbsp chopped yellow bell pepper
½ tsp salt
2 Tbsp minced cilantro
To taste Jalapeno pepper, minced
Garnish Cheddar or jack cheese
Tortilla chips and/or vegetable crudite
Instructions
Cut the avocados in half and remove the seeds.
Scoop out the pulp and place in a bowl.
Drizzle the pulp with lemon juice and mash, leaving some chunks.
Mix well with remaining ingredients.
Add Jalapeno to taste and garnish with cheese

I agree on the how did he mistake the two BUT..
Take a tomato or two,dice it up, take the avocado, hollow it out, take out the seed, and dice it up.
If you have seasoned rice vinegar,good, if you don't,use any vinegar, or even some lemon, pour some over the mixture of tomato and avocado, add some kosher salt and pepper, stir.
Eat.

this is so ironic because i just watched and episode of good eats on foodtv and it was about avocados! he made avocado ice cream, frosting and butter. but if that isn't your forte, i'd recommend chicken and avocado salad, shredded chicken wraps with avocado and cucumber and cilantro, avocado soup, avocado quesedillas, bay shrimp and avocado salad, or whatever you want to eat and just add avocados to it! go to foodtv.com and search for avocados and theres about 530 recipes for stuff with avocados in it.

Just make guacamole. Add some onion, some garlic, some salt & pepper and mush it up a little. Not too much or it will be too mushy. You want some mush, some chunks. Other optional ingredients people like to add are tomato, mayo/miracle whip, lime juice.

well, prepare the real mexican guacamole and here is the recipe
add chopped tomato and onion. also chopped cilantro, cucumber, add lemon juice and salt at your like then make a pure with the avocado and mixed whit everything and its ready.

Hahahaha... funny! Sure you can make a bunch of stuff with avocados. For instance, you can use them for a bean dip mashed as one of your layers. Other layers would be shredded cheese, sour cream, etc.

Your grocier shouldn't give you any trouble about taking the avacados back and replacing them with the mangos that you wanted originally if you simply explain that there was a mix up..
