i want to make grilled chicken over sinach salad. i am new to cooking and am unsure of hpw to make it really low in fat and taste really good. mu husband and i started weight watchers yesterday ....... thanks for all your help, i really appreciate it!!

I would buy boneless breast and prepare in a non stick with a little olive oil and I usually use a lemon pepper seasoning. Cook until done. Don't have your heat up past medium. About 10 -15 min depending on thickness of breast.
You can buy spinach leaves in a bag like you do lettuce already to go. I would rinse before using.
On a plate, place a mound of the leaves. I also sprinkle fresh grated parmesan cheese and some chopped toasted walnuts over my spinach. You toast nuts by slowly roasting them in a dry skillet over low heat. It really brings out the flavor. Also maybe a little thinly sliced red onion and feta cheese.
Then after you have the cheese and nuts over the lettuce, add your chicken, which you will slice into strips after it rests about 5 minutes. I have found that the best dressing for this kind of salad is a poppy seed style dressing. Krafts and Marzetti's both make a great one. I usually don't mess with croutons with this salad. i guarantee if you make this you will love it.

Use baby spinach if you can. Grill your chicken with just a little salt and pepper.

2 handfuls of leaves
1 avacado diced
1 tomato diced
blue of feta cheese
Drizzle some olive oil and balsamic vinegar and a little salt and there you go.

i usually sautee the spinach (uncovered) in a bit of olive oil for a few mins w/ minced garlic and a bit of salt to taste. fry the garlic in the oil for about a min first. if you want the spinach raw, just add some olive oil, white wine vinegar, salt and black pepper to taste, toss and serve w/ the grilled chicken.

Go to cooks.com or weight watchers.com for recipes. You will find some great recipes and some great ideas. good luck. Weight watchers really works if you work it!
