You can eat anything you want, you just have to be responsible with your portions.

A dialysis patient should limit potassium (extremely important), phosphorus, calcium, sodium, and water (1-2 quarts per day). Remember that there is water in all fluids (millk, coffee, pop), soup, popsicles, ice cream, etc. Anything that is liquid at room temperature you can consider a liquid.

On the other hand you shoudl try to eat more protein and slightly more fat than is normally recommended.

You should be especially careful with fruits and vegetables. Be sure to consult your dietician. Each dialysis facility has one.
