Chocolate Dump Cake
Makes 1 layer of an 8" cake.
1 cup sugar
½ tsp salt
1 ½ cups of flour
2 tsp vanilla
1/3 cup of cocoa powder
½ cup corn oil
1 tsp baking soda
1 cup cold water
2 tbs vinegar
Other equipment: 8" cake pan, fork or wire wisk
Optional: mixing bowl, paper to line baking pan, butter and flour
Preheat oven to 375° F. Be sure the oven is at 375° F before you start to mix the ingredients.
With a fork or wire wisk, mix everything together except the vinegar. Blend well.
Add the vinegar, stir quickly and put in the oven as fast as you can.
You can do the mixing either in a bowl or in the baking pan. If you mix in the baking pan, you'll have fewer dishes to wash, but you will have a hard time getting the cake out of the pan, even if you butter and flour it before you start. If you mix in a separate bowl, you can line the bottom of the baking pan with buttered and floured paper, so it will be easier to get the cake out of the pan; however, if you mix in a separate bowl, you have to transfer the batter to the pan and get it in the oven really, really quickly.
Bake at 375° F for 20 to 25 minutes until slightly puffed in the middle.

My comments: I usually make it in a square pan rather than round. I mix it in the pan after spraying pan w/cooking spray and have never had difficulty getting cake out of pan. You can frost it but it's very good plain.

carrot cake is made without eggs I think. I don't know how, but I am sure in a searche engine you'll find a recipe.
I checked and there are eggs in the recipes I found. Sorry if I was wrong, I still think maybe it can be done with no eggs. M y friend used to put choped pineapple in syrup in it.

you can use an Angel food cake mix and 20 oz can of crush
pineapple that's all you need it works best if you have an angel food pan and don't over mix follow the directions on the box for mixing and baking when it cools frost with cool whip. when I make this cake everyone just raves about it. Oh if you like coconut sprinkle over the top off with cherries the ones in a jar.

Chocolate cake with no eggs
INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1 1/2 teaspoons salt
6 tablespoons unsweetened cocoa powder
10 tablespoons margarine, melted
2 tablespoons distilled white vinegar
2 teaspoons vanilla extract
2 cups water
4 cups confectioners' sugar
3 tablespoons unsweetened cocoa powder
1/2 cup margarine
6 tablespoons water

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Sift the flour, white sugar, baking soda, salt and 6 tablespoons of the cocoa into a 9 x 13 inch baking pan.
Drizzle melted margarine and the vinegar over the flour mixture. Add the vanilla and cold water and stir well to remove lumps.
Bake at 350 degrees F (175 degrees C) for 35 minutes. Spread with chocolate frosting.
To Make Chocolate Frosting: Combine the confectioner's sugar, 6 tablespoons water, 3 tablespoons cocoa, and 1/2 cup of the margarine. Heat until melted and stir until smooth add vanilla and nuts if desired, and spread over cake.

If she likes Pumpkin.....Take a boxed spice cake mix...with one can of 100% pumpkin ...Mix together...bake at 350 for approx 30 min!....It is sooooo moist!!
