This is a reference to an old addage that an actor is so good that he could 'Read the phone book' and make it interesting. This phrase "Id do the phone book....he's a fantastic filmmaker' is to say the same thing. "I would perform the most meaningless piece of script just to be able to work with this filmmaker."

Means that he would do a script with Arthur that is pointless.

Or sexually, means that he'd do anything.

sounds like that she would make a movie with arthur...even though it is such boring material, he would make a good movie...
