i really like 7-layer dip.... it doesn't take long at all, and you can add whatever variations you like to it... plus, you can make it low fat, if you want to...
here's a quick recipe
1 package of cream cheese (can be fat free)
1 tub of sour cream (can be fat free)
one can of refried beans
lettuce
tomato
Shredded cheese
black olives
1 package taco seasoning
1 jar of salsa
In a bowl, mix together the cream cheese (you may need to warm it in the microwave first) a few spoons of the sour cream, and the taco sauce.
spread the beans in the bottom of a large pan. Then top with the cream chees mixture. Spread the salsa as the next layer. Then add lettuce, cheese, tomatoes and olives...
It takes like 15 minutes max to make, and it's AWESOME!!! all you need is a bag of tortilla chips and some margaritas and you're all set!

If you want to get a different taste...
use fish sticks or frozen breaded chicken nuggets. Cook to the directions.
In warm flour tortillas add sliced fish sticks in about 1" slices, or the chicken nuggets sliced in half and make you a wrap like fajitas with the veggies.
Keep the sauces and cheeses white as in Ranch Salad dressing and shredded Monterrey Jack. Cuban black beans work the best for the side dish.

ARROZ CON POLLO
3 lb frying chicken, cut into pieces
1/2 pound sliced chorizo
Olive oil
2 large onions, chopped
3-4 cloves of garlic, minced
2 small green peppers, finely chopped
4 cups of canned tomatoes, including juice (32 fluid oz)
Black pepper
Spanish paprika
Bay leaf
Powdered saffron (optional)
2 cups of uncooked rice
1 small can of pimiento
Cooked peas
In a large saute pan, brown the chicken on all sides in 1/4 cup of olive oil. Add chorizo, onions, garlic, and green peppers. Cook 5 minutes, stirring frequently. Add 4 cups of canned tomatoes with the liquid. Add 1 Tablespoon of salt, 1/4 teaspoon of ground black pepper, 3 teaspoons of Spanish paprika, 1/2 of a bay leaf. Cook 15 minutes. Add 5 cups of boiling water. Add 1/2 teaspoon of powdered saffron if you like saffron. Slowly add 2 cups of uncooked rice. Cover and simmer 30 to 40 minutes or until the rice is cooked and the chicken tender.
At serving time:
Chop up pimiento. Sprinkle peas and pimento over the chicken/rice. Heat through and serve.

Oh I have a wonderful one we just made! You will absolutely love this!
BEEF CHILI RELLENOS CASSEROLE
1 lb. ground beef
4 oz. can green chilies
1/4 c. chopped onions
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. grated sharp cheese
1 1/2 c. milk
1/4 c. flour
1/2 tsp. salt
4 beaten eggs
Brown beef and onions. Season with salt and pepper. Put in 1 1/2 quart casserole. Layer chilies. Cover with cheese. Mix milk, flour, salt, eggs and a dash of pepper. Pour over cheese. Bake at 350 degrees for 35-40 minutes.
Serve with lemonaid and lots of tortillo chips!

quesadillas, very simple! fill with beef or chicken cooked in taco seasoning, add cheese and spinach fold in half toast in pan that has 4tblsp. of oil until tortilla is golden brown, voilla!
