You have some good answers already. Let me elaborate a little bit. The animals are far more intelligent than we give them credit for. The scriptures promise that in the final judgment, the animals will testify for or against us in how we treated them. In this special case, God needed to get Balaam's attention and did so by means of the donkey. Today, He gets our attention in whatever way is appropriate for each of us. MIracles do happen today, I have been party to some small miracles and have been made aware of many others that were of a larger scale. Miracles are a result of faith and Godly need. God doesn't throw miracles around for our amusement or pleasure as one of your other respondents indicated. He gives us miracles in response to our faith and our need for that miracle. If the need is in accordance to His will and our faith is sufficient, then the miracle can happen. It was not coincidene that I ran out of gas twice in one trip and both times, in the middle of the night, a person was at the spot of my need with a couple of gallons to keep me going until the next station. On that same trip, I ran into a spike buck and killed both the buck and the car. Within five minutes, a good samaritan came along and gave me a ride to the next town where I could call the sheriff and arrange for a tow truck. The family then took me back to the crash and my family. No other vehicle came down that road, the entire time I was gone. These were not coincidences. These are today's miracles in response to today's needs.

If you're talking about Grimm fairy tales, they are fiction. If you're talking about people making special effects, that's trickery. Theth difference is that God can actually make a donkey talk. He can actually put words into the donkey's head and manipulate the donkey's mouth to make it speak. It's real.
There are many ideas about why this sort of thing doesn't happen now. One is that God has stepped back and is still intervening in our lives, but a little less obviously. Since Christ died, God has done most of his direct intervention (talking to us directly) and is waiting for us to make a decision for Christ. He has already provided us enough evidence and now it is up to us to have faith. Another is that God does do this sort of thing today, but it is not really publicized because nobody would believe the person He talked to. I go with the idea that He talks to us today, but more subtly. This is because I have felt His presence and His love. That is all I need to have faith.

Why not in modern times? Good question. Perhaps there are so many miracles going on that we barely notice them.
Or maybe God wants us to concentrate on the important stuff, like on Jesus.
He didn't create us just so we could demand miracles as entertainment.

You have been exposed to far to many fundamentalists, it is a metaphor, if humans have become to complacent in their relationship with God, and choose to no longer hear Him/Her, then God must get 'creative' and find interesting ways to get our attention... ...there are even scriptures that say the rocks will call out if we fail to.
