In old times people believed that when you sneezed your soul could come out of your body.

In Victorian England it was believed that when you sneezed, a small piece of your soul was lost, so by saying 'bless you' that piece of soul was replaced.

Because they used to believe that when you sneezed, your heart stopped and so they blessed you because you came close to death.
Im pretty sure thats for sneezing.
For yawning, we cover our mouths because they used to believe our souls could escape if we didn't. Pretty sweet.

the ancients believe it was the spirits leaving or entering the body, so a blessing was offered.. why they didnt bless when someone farted is another question
