First of all I think Mox Nix is WAY to familiar with chicken's anatomy.
Now to answer your insightful question:
I believe it was a prehistoric man living in the area now known as New York. My theory is that he had been hunting chickens and eating them. Then he caught some live chickens and kept them in captivity for the purpose of eating them. Through observing the chickens in captivity he realized that chickens came from the eggs. After that realization it was only a question of time before he would eat the egg. Being from New York he was always in a hurry so he ate increasingly younger chickens because he grew tired of waiting for them to mature. The same guy probably gave us veal.
