Depends on many factors and the first of vital importance is what is your mother tongue and also have you aquired some level in another foreign language. Take as an example the different Alphabets. Mainly used are Slavic, Latin and Arabic. If you are an English speaker definitely for you'll be easier to learn some languaged based on Latin alphabet. Spanish is with tough grammer( but not as tough as the German), the plus is that Spanish vocabulary has many similarities with the English,look only opportunity=opportunidad, libery= libertad, value=valor etc. I can say from my personal experience that Italian is easier,the grammer is simpler and is a very pleasant..Best of luck!!

If about easiness, go for Esperanto and Ido. Those are constructed languages. International auxiliary langueges. They were designed to be easily learned.
If you dislike the idea of those languages, I'd say then Malay, Indonesian and Norwegian bokmål and nynorsk. They are easier to learn than English. The trick with Norwegian is the sound system, but once ou get used to it, it is easy.
Of course, it depends a lot on what your backgroud is. Many have mentioned Spanish. Maybe because they already know it. But it is not easier than Portuguese or Italian.
Chinese grammar is pretty simple. But you'll have to deal with tones and kanjis. for that matter, learing Japanese would be easier.

I am mexican, and as far as I know, for strangers Spanish is not easy at all. Maybe you say it is easy because you are some what used to listen it.
But there are so many rules, the verbs forms are so different in times and persons, there are a lot of words for concepts that in English have only one.
I know a lot of Americans come to Mexico and they can communicate, but believe me, their spanish is not good. Speak proper spanish is completely different.

That depends what is your native language, I have heard that Spanish isn´t easy, but here I read the opposite. To me I am spanish speaker is Portuguese, Italian and English. But English speakers would be French, i guess.

I definitely think Spanish is the easiest to learn. Easy to pronounce, good rules to follow with few exceptions, and some words are "cognates" with English equivalent.
