Why can't you have orange jam or strawberry marmalade? And what is the difference between jam and preserve?

A friend of mine suggested that orange preserve is possibly known as marmalade from the french phrase or description of giving marmalade to help treat scurvy.

Although not as high in vitamin C as say lemons or limes ( which incidentally is where the american term 'Limey' originates ) preserves would last much longer and would doubtless be easier to stomach.

'Mar' translates loosely as sea (mer) and 'malade' probably comes from malady, meaning sickness.

I also think there is something to do with the way that jams and preserves are made but can't place a definative answer on it just yet

Addendum - just seen a question on the weakest link asking what is the more common name for 'mar d'la mer' - the answer is sea-sickness and appears to be an anagram

Marmalades contain peels, jams contain pulp, preserves contain chunks of fruit and jellies have no pulp, peel or fruit. The best examples of each type are orange marmalade (slivers of peel suspended in orange jelly), strawberry jam (thick, with seeds and pulpiness, but no identafiable fruit chunks), apricot preserves (thick, with chunks that are obviously bits of fruit), and grape jelly (clear, smooth, no chunks, no seeds).
I suppose you could, in theory, have orange jam, but since strawberries don't have a peel, you couldn't make strawberry marmalade.

Marmalade is made with citrus fruit????

Just a guess....

Jam is usually more solid than preserve.
