The paper bag lets enough air in to keep them from spoiling but also keeps the fruits/veggies tell each other how to get ripe by keeping their chemicals together in the small air space. See the link below!

These fruits are releasing ethylene gas which causes them to ripen.
Ripening is the conversion of starches to sugars. Some fruits like tomatoes are realeasing the gas, and will turn color, but do no not actually ripen.

yes, bananas and also peaches ripen in few days if you put them in a bag. Try tomatoes that are orangish red, and you think they need like 2 days to ripe? Put them in a brown bag outside for 2/3 days at the max, and see they will turn out nice and red and then you can put then in the fridge and use them will chilled as you like .

They emit gas as they ripen; so when you out them in the bag theya re surrounded in them and absorb them. Same reason you dont put bananas and apples together in the same bowl; the bananas will ripen too fast and rot.
