I like to buy the 85/15 blend of ground meat for normal hamburgers, but buying good rib eyes and having the butcher grind them is best. Grill outdoors for best flavor.
Marinate the ground meat, before it is in patty form, in soy sauce and garlic (don't go crazy)for at least 2 hours. Form into patties. Cook until well done. You can cook in real butter with onions on the stove for a good flavor, too
While the burgers are cooking, saute some onions until translucent, or use onion buns.
Now, BLT, I only know one way. BLT on wheat. smiling
Meat ball sandwiches..mix the meat with egg white and garlic and other seasonings. Saute in pan with olive oil and onions until done, turning occasionally. Pour favorite sauce on.
There are so many variations to use...have fun!

We had a cookout three weeks ago and served burgers seasoned with Chef Paul Prudhommes magic seasoning blend. We happened to have two different kind: the seafood blend and the blackened steak blend. Friends not only asked what were in them but we had people show up every weekend since.

Try this: If you use a small butchers shop, call ahead and ask them to prepare a couple pounds of ground brisket. This makes for a tasty burger, a little change from ground beef. Assume you know how to make the patties???

below is the simplest way to do burgers from scratch, for those who want burgers without preservatives.
in a big bowl, beat 2 large eggs. add the following and MIX WELL:
1 level tsp of salt
1 level tsp of ground pepper
1/2 tsp of dried basil leaves
1/4 tsp of ground oregano
1 level tsp of dried ground garlic (or 1/2 head fresh, crushed)
1 level tsp of dried ground onion (or 1 small, chopped fine)
add one pound of ground beef and 2 Tbsp flour. MIX WELL. chill in the refrigerator for an hour to make the spices blend before forming into patties.
form into patties. chill until needed, or freeze for longer shelf life. grill and serve with your favorite sauce (i prefer honey-mustard sauce) and salad greens. enjoy!
tips on mixing: mixing the egg with all the seasonings first before adding the meat and flour ensures equal distribution of spices. you spend less time in mixing and you can be sure that every patty tastes the same.
tips on grilling: i usually pack my burger patties in small individual foil squares. i just put each on the grill, with the foil underneath it, to prevent the burger from collapsing during the first few minutes of grilling. i remove the foil when i turn the burger on its other side, and proceed with grilling as usual, browning each side to my preferred doneness.
bon appetit!
