First, simmer garlic and onions in a shallow pan with a drizzle or two of olive oil. When onions are translucent, add 1 lb. raw, diced chicken. Cook over medium heat for 10 minutes, stirring frequently. Remove from heat.
Add 1/4 tsp. each thyme, basil, minced garlic. Mix.
Add 1 cup of chicken stock or cream of whatever soup you like. Return to low heat and cover. Cook 20 minutes.
Serve over rice or noodles. Salt and pepper left to the diner.
