I noticed they only write Gd or G-d.

Its because of an old Jewish superstition. One of the 10 Commandments states that you are not to take the name
of God in vain, meaning you shouldn't use it in a wrong or disrespectful way (like swearing) There came a time in Jewish history when
the Jewish religious leaders started to "clarify" the Mosaic Law, really more like stating their own opinion of what God "really" meant.
Like the command regarding keeping the sabbath, no secular
work was to be done. They nitpicked this to the point that if
a flea bit you, you couldn't kill it on the Sabbath because that
was hunting and thus work and you could face the death penalty
for breaking that command (that's why even to this day,
Orthodox Jews have timers on their lighting systems to turn on
and off on the Sabbath, and elevator systems that stop at every
floor on the Sabbath, so no one has to push a button)
So back to God's name: these nitpickers decided that it
could not be said, as we are sinful, imperfect people and
we might think a sinful thought as we say God's name,
therefore, it would mean we were using God's name in vain,
thus breaking the Law. They removed the Tetragrammaton
(4 consonants that make up the Divine Name) from the
Hebrew Scriptures) and replaced that name with substitute expressions like Lord or Almighty. Because of that superstition,
the actual pronunciation of God's name has been lost but
most Bible scholars recognize Jehovah as the form of the name that is most readily recognized because it has been used in English for centuries and preserves the 4 consonants of the
Hebrew Tetragrammaton.
So, Jews won't use God's name or write it because of
a misguided superstition.

His name is Yahweh. It's sometimes spelled as YHWH, because the written Hebrew language doesn't have any vowels. Jews don't say his name out loud. It's a sign of respect--kind of like the name is too sacred to be thrown around.

Jews have a different writing structure. The word they use for God is translated into English as YHWH, which we pronounce as Yahweh. (yah'-way)

SOME Jews do that. Not all Jews. The one's that do (the more conservative Jews), do it out of respect. It's a way of humbling.

They do not write God on paper because it defiles His name to be tossed away into the garbage. He is more Holy than that.

God is not his name, God is the name given to him so people can say his name.

Caiman94941 has it right; it's because of a superstition and I think it is so sad.... superstition should have no place in religion!
