Strawberry Blossoms

12 large fresh strawberries, rinsed
3-oz. cream cheese, softened
2 tablespoons powdered sugar
1 tablespoon sour cream

Slice stem end from strawberries to form a flat base. Place strawberries on cutting surface, pointed end up. Carefully slice each strawberry in half vertically to within 1/4 inch of base. Cut each half into 3 wedges to form 6 petals. (Do not slice through base. When filled strawberries should resemble a flower.) Pull petals apart slightly.

In small bowl combine cream cheese, powdered sugar and sour cream; beat until light and fluffy. With pastry bag fill strawberries with cream cheese mixture.

Recipe can be easily increased to make more than 12 strawberries.
This recipe has always received raves from friends and family. The first time I made it was for an Easter brunch. Make ahead in the day and refrigerate until ready to serve.

Oh, you should so talk with my Sweetheart because she was a pastry chef before she became a nurse. How about taking some fresh strawberries though, heating up some chocolate and dipping them? Not any more than you're going to eat for an evening as they will spoil unless you freeze them...just an idea from a soups and stews cook...lol

Put fresh strawberries into a blender with lots of ice, sugar and fresh milk. Blend until they become syrupy, melt some cooking chocolate and pour the syrup on it. Top with cream. Bon Appetite.
