Only the shade of tan should be different..it goes from dark red to tan. Any other markings or lack of those Black and Tan markings is a disqualification to show in conformation, but can show in obedience.
For instance, the tan markings are specifically designated as to how much and where.....There is to be no white patches, although a few white hairs on the chest is not a fault.

But if the dog has an all black face (which i have seen) it can still show in obedience or agility. The same goes for having a white chest.

There are Albino Rottweillers, but that is a disqualitying fault.

AKC standards allow a tiny variation of the black/tan.
They will register black/rust and black/mahogany.

But those are the only 3 recognized, acceptable colors.
