do they like salmon? I have an extremely simple recipe for that. it uses olive oil and a bit of lemon pepper. To go with it, you could make them a big salad with romaine, strawberry slices, blueberries, walnuts, mandarin oranges, and poppy seed dressing. or get a caesar salad kit at the grocers - it is in a bag and everything is there all set for you inside of it, even the dressing and croutons. baked potatoes are extremely easy as well. Oh - how old are you, so that I know what you might be able to handle... I will give you more ideas in a minute.
chicken breasts over rice is good. shepherd's pie is not difficult either. cheesecake that is not baked is easy, or just a boxed cake mix. or serve cheese and fruit for dessert

Thai green curry is easy.
Buy Green Thai curry paste (from any supermarket),4 - 5 chicken breasts,one large green pepper,large onion,tinned coconut milk (400ml) and rice.
The instructions are normally on the side of the curry paste; but basically:
Preheat oven to 200C gas mark 6
Finely slice the onion and pepper
Chop the chicken breasts into strips
Fry onion in a pan until soft
Add green pepper, fry for approx 2 mins,
Add 1/2 - 1 tablespoon (depending on taste) of curry paste to the pan and cook on medium heat for 2 mins.
Add chicken and fry for another 3 mins, until the chicken is browned.
Add coconut milk and cook for a further 2 mins.
Transfer all ingredients to a medium cooking pot and place in oven for about an hour.
About 15 - 20 mins before end of cooking,cook rice.
Hey presto!!
It's probably a good idea in whatever you choose to cook to have a practice run first so you won't be so worried about things going wrong on the day.

Rosemary Dijon Chicken~
3 servings
3 chicken breasts
4TB olive oil
2TB dijon mustard
1 TB minced garlic
salt and pepper
9-12 sprigs rosemary
1. Dice chicken into 1-1 1/2 in cubes
2. Salt and pepper
3. Mix oil, mustard, and garlic, and rub on chicken, and marinate for an hour or more.
4. Thread Cubed chicken onto rosemary sprigs, starting on the bottom side and move the chicken towards the tip.
I baked them at 375 for about 15 minutes although you could grill if desired.
Dijon Beer blanc
6TB basil vinegar
1/2 C beer (I used a belgian ale)
2-3 shallots minced
1/3 stick butter, cut into small cubes
dijon mustard
combine vinegar, beer and shallots in a pan and reduce to about 1/2 or 1/3. whisk in cold butter, and small ammounts of dijon alternatly, until smooth and creamy.
Served w/ grilled asperagus and
CHERRY RICE PILAF
This flavorful combination proves that nutritious eating
doesn't need to be bland and boring.
1 cup chopped onion
1 cup chopped celery
1/2 cup dried tart cherries
1/2 cup chopped walnuts
1 tablespoon chopped fresh thyme (or 1 teaspoon dried)
1 tablespoon chopped fresh marjoram (or 1 teaspoon dried)
1/2 teaspoon ground black pepper
1 tablespoon margarine
3 cups cooked rice
Put onion, celery, cherries, walnuts, thyme, marjoram and pepper in margarine in a large non-stick skillet. Cook, uncovered, over medium heat 10 minutes, or until vegetables are tender; stir occasionally. Add rice; mix well. Cook 3 to 4 minutes, or until thoroughly heated.
Makes 8 servings.

creamed chicken and biscuits
1/2 large onion
1 1/2 tsp butter
4 cups chopped cooked chicken
1 can cream of chicken soup
1 can peas and carrots mix
1 cup sour cream
1/2 milk
1-2 cups shredded sharp cheese (depending on how cheesey you like things)
6 frozen biscuits, thawed
preheat the oven to 350. Grease the bottom and sides of an 11 x 7 baking dish
Chop onion. Heat butter in skillet over mdm. high heat until melted. Stir in onion and saute until tender
Combine the onion, chicken, soup, sour cream, milk, and peas in mdm bowl and mix well. spoon the mixture into prepared baking dish. Bake for 15 minutes and remove from oven
Sprinkle with cheese arrange bisuits over top. Bake until biscuits are golden brown and the sauce is bubble. About 20 minutes.
Serve immediately

Easy Lasagna
Servings:8
A super easy and fast beef lasagna recipe. It is made with a prepared sauce, and requires no boiling of the noodles."
Original recipe yield: 8 servings
INGREDIENTS:
1 pound lean ground beef
1 onion, chopped
1 (4.5 ounce) can mushrooms, drained
1 (28 ounce) jar spaghetti sauce
1 (16 ounce) package cottage cheese
1 pint part-skim ricotta cheese
1/4 cup grated Parmesan cheese
2 eggs
1 (16 ounce) package lasagna noodles
8 ounces shredded mozzarella cheese
DIRECTIONS:
In a large pan, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
Bake in a preheated 350 degree F (175 degree C) oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

enchiladas are a favorite of most people i kno its simple and fast and delicious
1 pound lean ground beef
a bag of shreded cheese
and 8 to 12 tortillas
enchilada sauce in a can
get a big pan put about 1/4 cup of water in it (make sure the beef is not frozen) and put it in the pan and cok it til its turns brown add some pepper just a pinch and a pinch of salt
when u r finished sit it aside
get a big plate empty half of the enchilada sauce on it,
put in one tortilla at a time in the sauce cover it on both sides with the sauce until they are all done
get an 8 by 12 baking dish put a little bit of meat in the middle of each tortilla and some cheese roll it up sit it in the dish do all the tortillas that way side by side turn the oven to 375 degrees and pour the rest of the enchilada sauce on top pf them and bake for 25 minutes

MAGDALINAS VALENTINE CHICKEN
4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount
flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.
Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.
Drain and remove excess grease from skillet.
Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.
Simmer on medium heat till onions are soft.

LONDON BROIL
Servings: 8 (5 1/2 oz. each)
4 lbs (2 large) flank steaks
FOR THE MARINADE (makes about 5 1/2 cups):
16 oz (2 cups) salad oil
8 oz (1 cup) soy sauce
8 oz (1 cup) Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds
1 tsp garlic powder
1 tsp. ground ginger
1/4 tsp dry mustard
MARINADE INSTRUCTIONS:
Combine all ingredients for marinade; blend together well. Place flank steak into marinade. Use small enough container to allow flank steak to be completely covered by marinade. Marinade 24 hours minimum and not more than 4 days or flavor of the meat will be overpowered by marinade
COOKING INSTRUCTIONS:
Preheat grill to 360 degrees F for 1/2 hour.
Drain marinade from meat. Reserve marinade up to two weeks if needed.
Grill flank steak to medium rare. This will take approximately 10 minutes cooking time total. Hold cooked flank steak in warmer if necessary.
Transfer the steak to a cutting board and let rest for 5 minutes.
Slice cooked flank steak at 30 degree angle 1/8-inch thick slices: This is essential to keep flank steak tender.

go and get a cake mix from the store and bake him a cake. Directions are on the box and there are tons of stuff at the store you could buy to decorate it with, I'm sure he would love the time and thought put into it. You can also buy a frozen Lasagna dinner at the store that would feed the whole family for approx. $10.00, take it out of the original box and put it in your own pan and just heat it, they are very good. Just know they will love anything you do because you are there child and they will see the effort that you have put into making the day special for them.

there is nothing more simple than spag bol!
you need-
1 onion
2 cloves of garlic
mushrooms
500g minced beef
1 tin of tomatoes
i carton of passata
and of course spaghetti
fry the (chopped) onion, (crushed) garlic and (chopped) mushrooms in a little olive oil, when they are soft add the minced beef until browned. add the tomatoes and passata and season with salt and pepper to taste.
cook spaghetti as per instruction.
you can but grated Parmesan cheese in the fridge section of tesco.
to finish it off, sprinkle a little chopped parsley on top of the meal.
we had this last night as i was late hope and needed something nice, quick and easy. takes 20-30 Min's.
