Technically and legally they're "dates" because they're charging for their time.
Someone is only a prostitute if they accept money in return for sex.
Hiring an escort is paying for the time she spends with you... and whatever happens between two consenting adults (and money can be seductive, and I am sure women in those professions "fall in lust at first sight" ALOT).
