Alaska is one of my favorite cruise destinations and Europe is a great cruise destination. I feel the Caribbean is an OK destination, but not as unique as your other two options.
That being said, Disney is one of my top picks for cruises and Carnival falls toward the bottom. Disney's service far exceeds that of Carnival and the rooms, staff, food, cleanliness, etc are all a lot better on Disney. Whether or not you have kids, Disney cruises are spectacular.
It really just depends where you want to go and what you want your onboard environment to be like. Carnival tends to be more of a party boat with a younger crowd onboard to party and have a good time. It is kind of a cross between spring break and Las Vegas. Disney is a more sophisticated environment that is service oriented, with amazing Disney productions, but with the addition of several activities that will attract children. Disney and Carnival are both popular lines for families, so, if you are wanting to avoid kids, these may not be the best choice of lines. But based simply on the port, your Carnival options would probably have fewer children onboard.
So here is what it comes down to, given the choice between Carnival and Disney, I would pick Disney without question, regardless of cost. Given the choice between the Caribbean, Alaska or Europe, I would either go with Alaska or Europe. Perhaps you should consider doing Disney's Mediterranean cruise next year. I think this combines the best of your options into one.
Strictly going with your options, I think I would pick Disney Caribbean. I just feel Disney is a much better line than Carnival. But, it depends how important your cruise ports are to you and which interests you the most.

Depends on what you like to do and see. I would say to take the Alaskan cruise just cause you can go see Italy later. The Alaskan cruise should be the most beautiful things and relaxing. I mean I just prefer to relax on a cruise instead of the hustle and bustle of going to each port city and stuff. Take the time to enjoy it. Italy is great but better from the land. Same goes for the Caribean. Alaska can be seen on land but way better from the water i would say.

First off I would island hop on a Carnival or Royal Caribbean cruise (7/11 day so long as it hits Dominica and Panama Canal; where parents were born); then an Alaskan one then a European one;

The European Carnival cruise. Carnival has too big of ships for Alaska, and Disney isn't that great.

Pablo Cruise did the song Love will stumble on a fashion. I keep in techniques the album conceal is blue. I nevertheless like that song. Beats Tom Cruise by a mile. yet a Mediterranean cruise should be quite constructive in the present day.

I've been to Caribbean, Alaska and the Mediterranean and Greek Islands. I have sailed Carnival once, Norwegan once, and the rest of the time, Royal Caribbean. I've been on 8 cruises. Alaska and the Med are great.

Do I have to choose from the ones you listed above?? If so, I should go with the European Cruise.. but if I could pick my own, I'd like to go with the Around the World Cruise.. lol.. :D

First choice, European cruise, second Alaska. I've done the Carribean before, not that impressed.
