Winamp. For windows, at least.
Opens quickly, doesn't use hardly any system resources. hundreds of skins to apply to change the look.

winamp is the best choose because it used memory ~3 - 7 mb
and Quickly started
jetAudio and real player used ~ 11 - 13 mb
windows player used ~ 13 - 17 mb

It's gotta be Winamp. I do like iTunes thoough.
