What kind of salads would it compliment?

Hommemade guacamole is super easy; 1 avacado, 1 small tomato, diced, fresh lime juice (squeeze half a lime), fresh cilantro, salt, pepper, and a dollop of sour cream. Blend it up, and serve.

Avacado is great on sandwiches, and excellent in many salads.

Avacado and papaya salad is my favorite:
1 Florida avocado, peeled and cut into large dice
1 ripe papaya, peeled and cut into large dice
1/2 Vidalia onion, thinly sliced
1 bunch baby arugula
2 tablespoons tarragon leaves
Orange and Vanilla Vinaigrette, recipe follows
Layer salad with arugula and tarragon, then avocado, papaya and onions. Finally drizzle with vinaigrette.
Vinaigrette:
1 cup orange juice
1 vanilla bean, split
1 garlic clove, pureed with knife
1/4 cup rice wine vinegar
1/2 cup extra virgin olive oil
Kosher salt, to taste
Fresh ground black pepper
To a saucepan add orange juice, split vanilla bean and scrape seeds into juice. Add vanilla bean to juice, bring to a simmer and reduce liquid by 2/3. Meanwhile, smash garlic clove with a pinch of salt using flat side of a knife. Allow orange juice reduction to cool, remove vanilla bean, then add garlic puree, rice wine vinegar and olive oil. Stir well and season with salt and pepper. Yield: 4 servings

Also, add avacado and creamcheese to your next backyard burger, meat or veggie!

Any kind of salad would be great! Chef or veggie garden would be best or a taco salad too!

Also slice and out on a turkey, chicken or ham sandwich very yummy! Or on a burger too, try it topped on a steak!

Make avocado, by adding lemon juice, garlic, jalepenos,cilantro, tomato and a bit of sour cream to mashed avocado is also wonderful.

Blend avocado with alittle chicken broth, heavy cream or sour cream, garlic, lemon juice and a bit of hot sauce for a cold soup.

Take slices and top with lemon, salt hot sauce and garlic with sliced onion and it is a great salad in intself.

californis salad

NGREDIENTS:
1/4 cup Marzetti® Slaw Dressing
1 tablespoon Honey
1 teaspoon Poppyseed
3 medium Oranges, peeled and sliced
1 large Avocado seeded, peeled and sliced
1/2 large Sweet Onion, thinly sliced
Lettuce Leaves

DIRECTIONS:
In a small bowl stir together dressing, honey and poppyseed. On 4 individual serving plates or small platter, arrange lettuce leaves, oranges, avocado and onion. Top with dressing.


Make-Ahead Tip:

If desired, prepare dressing and add onion. Cover and marinate in refrigerator 1 to 2 hours. Spoon over oranges and avocado.

INGREDIENTS
2 avocados
1/2 lemon, juiced
2 tablespoons chopped onion
1/2 teaspoon salt
2 tablespoons olive oil

DIRECTIONS:
Cut the avocados into halves. Remove the seeds, and scoop out the pulp into a small bowl. Use a fork to mash the avocado. Stir in lemon juice, onion, salt, and olive oil. Cover the bowl, and refrigerate for 1 hour before serving.

INGREDIENTS:
2 cups vegetable oil (for frying)
1 cup all-purpose flour
2 tablespoons salt-free herb seasoning blend
1 pinch ground cumin
1 avocado - peeled, pitted and sliced
1 egg, beaten

DIRECTIONS:
Heat oil in a large heavy skillet or deep-fryer to 365 degrees F (180 degrees C).
In a small bowl, mix together the flour, seasoning blend and cumin. Place the beaten egg in a shallow dish. Dip avocado slices in beaten egg, and then in the flour mixture. You may repeat the dipping process if you prefer a thicker batter.
Fry the coated avocado slices in the hot oil for 3 to 5 minutes, until golden brown, turning once. Drain on paper towels, and serve hot.

My favorite:

Just slice, heat up a taco, insert avocado and enjoy! Maybe add a lil sour cream or salt for extra flavor :-)

And then if you want some homemade guacamole:

Green-Green Guacamole

2 medium avocados, peeled, pitted and mashed
1/4 cup PHILADELPHIA Cream Cheese Spread
1/4 cup finely chopped tomato
2 Tbsp. finely chopped onion
2 Tbsp. lime juice
1 clove garlic, minced
1/8 tsp. salt
Dash of black pepper



MIX all ingredients until well blended.
SERVE with tortilla chips.

if you are looking for avocado salad recipes, try putting diced avocado with chicken salad.

dice up cloves of garlic, steamed/ grilled chicken breasts

add in mix vegetables, or any vegetables that you would prefer.

add in mayonaise, but not too much. remember to gauge for how many people.

add in your preferred amounts of avocado, and VOILA!
avocado and chicken salad.

if you just like the taste of avocado, there is an indonesian drink that uses avocado. it is like an avocado shake.

you could dice avocados and put them into the blender. it is better to get ripe avocadoes for this.

pour mixture into a glass of ice. stir in brown sugar syrup if you have any.

This doesn't sound like much but it is so good!
Take 2 Tbls of Miracle Whip and mix with 1 1/.2 Tbls. of Mustard
1/4 tsp of sugar
1Tbls of milk
Mix together and put on top of cut up avocado! Enjoy!

Avocado and Shrimp Salad

3 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1 pound shrimp
1 cup mayonnaise
2 tablespoons bottled chili sauce
1 clove garlic, crushed
Tabasco sauce
1 avocado
1/2 lemon, juiced
2 tablespoons fresh dill weed
2 tablespoons fresh chives

Cook and cube shrimp. Whisk together first 3 ingredients until well blended. Add to shrimp, toss thoroughly, cover and marinate. Meanwhile, whisk mayonnaise, chili sauce, garlic, Tabasco, salt and pepper until smooth. Set aside. Cube avocado; sprinkle with lemon juice. Drain shrimp. Add avocado, dill and chives and toss lightly. Fold in enough mayonnaise mixture to coat lightly. Taste and adjust seasoning. Cover and chill until ready to serve. Divide salad among chilled plates.

Guacamole. I know it's the obvious answer but you can have it with chips, on sandwhiches, wraps. I always put lemon, seasalt, and a little cayenne pepper in mine. If you really want to get creative make an avocado smoothie. Sounds weird but it is so good. Goes great with mango and tropical fruits with banana.

I make 'avacado sandwiches" when I grill steaks

just get a loaf of French or Italian bread, not sliced, cut it yourself into thick slices, toast it on the grill ,then add slices of avacado, tomato, a little salt & pepper and a drizzle of olive oil....it is deeelish

You could just cut it in half, take out the seed and sprinkle some salt on it or a spoon of mayo, grab a spoon and start scooping away.
