I would get any Rachael Ray cookbooks because all of them are easy, cheap, and can be prepared in under 30 minutes :)
I suggest Express Lane Meals or 365: No Repeats...they're both under $20 and you can find them at any book store.

Hummus and veggies are a good snack. For an easy and cheap meal, I made some lentil sloppy joes last week. Just some boiled lentils (1 cup dry, cook with 4 cups of water, then drain) mixed with sloppy joe sauce (1 can), and eat it on bread like normal sloppy joes. It's cheap, easy, and good :)

When my kids went to college I put together a different book for each child with their favorite recipes. Ask your Mom and friends to submit recipes to you, type them up on the computer, print them out and put them into a notebook with divider pages to place the recipes into categories. As you find new recipes that you like you can add them. When the kids were at school if they remembered a recipe that they wanted I was able to e mail it to them and they either printed it out or retyped it and printed.
There are also tons of easy, inexpensive recipes at your finger tips online.

i don't know about a cook book, but stock up on Ramen noodles, Easy Mac, Chex Mix, and chicken.
2 favorite (and easy) recipes
MASHED POTATOES: boil some cut up potatoes, drain, add ranch dressing, mash to perfection
CHICKEN PASTA: boil pasta, drain, add cooked chicken with can of veggies, top with parmesan cheese

Well, there are plenty of cookibooks out there, just stop in a book store such as Barnes and Noble. But for now, cookinglight.com has hundreds of poultry recepies that are light and easy. :]
