I use the "smell & nothing growing" test. If I quiver at the thought of using it, even if it passes the "smell & nothing growing" test, I throw it away. If I can't remember when I set it in there, I throw it out. If I remember, and think "maybe that was TOO long", I toos it too.

P.S. Always tighten jars and containers very tight before setting them in the fridge, so they stand the best chance of surviving. Too, fridge has to be maintaining very cold temperatures before applying test listed above. :-)

You can probably keep it for a week or so, but once you open spaghetti sauce, even if you keep it in the frig it starts to lose its zing. If you can't use the whole jar at one time, use half and freeze the other half. It freezes very well, and that way you don't have to worry about spoilage. Or having to eat spaghetti three nights in a row....

I would suggest putting the sauce in a plastic container with a tight lid put a date on it check the jar for an expiration date

when it starts to talk back to you that is not a good sign or when it starts to form neat black fuzzy spots and greenish blue patches (looks really neat under black light) or if it is trying to crawl out of the jar on it own is another way to tell other then the smell but you should put it in a cup and cover it with plastic wrap
but to answer your question 2 to 3 days but not healthy to do that

My rule of thumb for anything in the fridge: 3 days, and then sniff it to be sure.

I would keep it in the fridge for 2 weeks, after that throw it out. if its watery toss it, green when you know that it was origianally red- feed it to someone you dont like and call it antipasto lol
