Because it is a good witness for the sanctity of marriage, since JESUS represents the Bridegroom and His church is His Bride.

I do not know why , because there is nowhere in the bible where any of the apostles had any pastor and wife appreciations. They had a job and that was to preach the gospel, to teach holliness until the end.Their's and those who are called to do the Lord's work will celebrate their anniversaries and appreciation upon the return of the Lord to receive up his saints. That when the wedding shall begin. Praise the Lord.
God's servants do not have time for appreciation or anniversaries, there is to much work to be done. The apostle Paul said in
2 TIMOTHY 4:7,8
7) I have fought a good fight, I have finished my course, I have kept the faith:
8) Henceforth there is laid up for me a crown of righteousness, which the Lord, the righteous judge, shall give me that day: and not to me only, but unto all them also that love his appearing.

When you are in a fight, where do the appreciation come in at? It comes at the end of the fight, and at the end of the fight for the Lord, you then can claim VICTORY. I pray for you all in the name of the Lord Jesus. Amen

I assume you meant "pastor". The theory is, we are all a part of the "family of God". As the head of the local branch of that family, it's considered appropriate to celebrate the pastor's anniversary, just as we would our parents' or grandparents'.
