i eat a lot of eggplants, but i don't really think they're that nutritious.. i mean they are, but there are many other things that are probably lower in calories and has more nutrients. i know celery and squash aren't THAT nutritious either (compared to like.. carrots, spinach, broccoli they aren't).. so im just wondering...

Problem with eggplants is that they only taste great with lots of olive oil. So I would say any vegetable with a low GI is the best option. Note that you need to check it out cause some vegetables are low GI when not cooked or when cooked so make sure you do some follow up research.

I dont know about the eggplant and squash but I do know is that celery burns more calories than what is has (but not much).

I dont really know the answer to this except to say that celery actually contains NEGATIVE calories. It burns more energy to eat a stick of celery than you actually gain by eating it....

the most nutritious out of those 3 are celery and its also good if you make it right

eggplants have high carbs so do squash so i WOULD SAY CELERY
