Could be too much water, didn't boil it long enough, fruit was too ripe....nope you can't fix it....I generally have this issue with fruit that is overripe. Firm but not mushy. Make sure you cut out the brown spots before you use it.
Make sure you are using fresh not overripe fruit, don't double up the batch, measure exactly and boil for correct amount of time. The type of pectin you use and how fresh it is also matters.

Gotta use sure-gel and cut back on the water. Nope, sorry, can't be fixed. At least this is everything I learned from your posted question!

Did you use Sure Gel? I tried a cheaper brand one time and had the same problem. Only thing to do is label it Strawberry syrup and make some pancakes.
