Chicken with Mango Salsa
*Grill a chicken breast, flavor with a little salt and pepper
*Top with homemade or storebought mango salsa
For a good mago salsa recipe try: Mango Salsa:
2 mangoes, small dice
1 medium red onion, small dice
1 cucumber, peeled, seeded, small dice
2 jalapeno peppers, minced
1/4 cup cilantro leaves, chopped
1/2 tablespoons ancho chile powder
2 large limes, juiced
2 tablespoons olive oil
Salt
Pepper
To make mango salsa, combine all ingredients together in a medium bowl and stir well. Keep refrigerated until ready to use.
Quick, easy, healthy, delicious.

Try a stir fry. cook some meat, less than one serving per person and chop it into pieces about 2" by 1" by 1/2", cut up raw veggies, (peppers, carrots, onions, broccoli, potatoes celery, frozen corn Anything else you have handy, doesn't really matter what just 3 or 4 different kinds), and throw it all in a frying pan together with either a little oil or 1/2 cup of broth, and stir til its all cooked. My kids begged for it at least once a week, and didn't even realize how good it was for them. I used to add 2 cups of rice and some soya sauce or a cooked package of ramen type noodles just before it was done to make it go farther.

Since recipes take way to long to type out (for full meals and such), I would like to recommend "The New Dieter's Cookbook" by Better Homes and Garden. I have the 1st and 3rd additions. They are FANTASTIC. Each recipe has a photo, time to prepare, time to cook and calorie count. Covers every thing from breakfast to desserts. Not only are they all easy and low calorie, but they are really tasty!

I recommend the cookbook "Butter Busters". They show you how you can replace 5 items in your kitchen with low fat substitutes and then build recipes around them.
