I have been to Thailand many times, for up to 5 months at a time. Normal U.K visa requirements (I think) 3 weeks or less and you don't need one. Two months with an opportunity to extend for another month. Then out the country and get a new visa in George Town, Penang, Malaysia. Really easy to do - when you get there the hotel will have a visa service.
I have not been there for a while so I can only tell you about stuff that doesn't change beyond recognition.
First though, Lonely Planet guides are excellent (their poor write up of one of my favourite beaches I think helped to slow it's development into the tourist hell it is now)
- You can buy bottled water everywhere, the tap water is not drinkable.
- You can find anything you want - clubs (BKK) Full Moon Parties (Haad Rin beach on Koh Phangan)
- Shopping is everywhere
- Transport is easy, busses, internal flights and trains will take you anywhere at any time just about. Moped, Harley, Jeep and car hire is very common and easy. Taxis and Tuktuks can be a rip off, so be prepared to be firm.
- Beach hawkers are (or used to be) a nuisance on busy beaches (Lamai and Chaweng on Koh Samui)
- Many places that used to be really quiet are now noisy, polluted, full of malls, hotels, traffic and girly bars. Some places are still far enough off the beaten track that you can only get there by boat and electricity comes from generators.
- There are excellent pharmacies and I'd trust the local clinics. Tourist clinics are a rip off. (I knew dental tourists back when it was cheap to go to Thailand)
- Thai food is fabulous. Don't be afraid to try food from street or beach traders, I was never sick. Though don't drink too much Singha beer as it contains formaldehyde and the cumulative effect of a big session can be nasty.
- There is easy internet access just about everywhere.
- I never saw a public toilet, though every restaurant has them, and restaurants are everywhere. That was never a problem.
- Accomodation goes from a loo-less thatched hut to more posh than you can imagine, so prices will suit whatever you want. I always stayed in a little thatched hut (I like beaches) with virtually nothing in it (bed, shelf, nails in wall to hang clothes up) and it was all we ever needed because we went there to get away from everything. Though we were 30 minutes walk from where we could shop, party e.t.c
- There are so many places of beauty and interest that I wouldn't know where to start. I always felt safe, had no problems even though there was a bit of cop bribery going on - nothing too serious. The people are civilised, mellow and not generally out to take you for what they can get. Or they used to be...The normal amount of caution is all you need. I hope this helped.

I already visited Amazing Thailand for one week and it is a good place particularly Bangkok where you can enjoy tropical fruits endemic to Southeast Asia like the succulent durian and jackfruits. Enjoy the colorful temples and Buddhist architecture.

Do not worry about water, there are many bottled water thereat and cheap.

It is safe to travel in Thailand and you do not have to worry about things you have enumerated.

The hotels are good and internet access is everywhere.

Tap water is not potable. Buy bottled water from the supermarkets. It is pretty interesting to try exploring Thailand. Go and not worry about anything. Any problem, ask the local for help. They will.
