my digital camera has a dock. if i unplug it while it is still charging, does it matter?

I would wait until it is fully charged. Regargable stuff tends to develop a shorter ability to hold a charge if you short charge it. If it gets accidentally unplugged, plug it back in asap.

If it is Nickel Metal Hydride, it does not hurt. It does not have "memory" as to where you left off. On your next go around, it will charge fully, no problem.

If it is someother type, Li Ion for eg., or another older type that just used to be called rechargeable battery, then it will only hold the charge to the point where you first charged. This will be a pain later on because you run out of power often and need to charge. IOW, it has a "memory"

You must find out from your owner manual what kind you have.
Your battery also will have a sticker, which will tell you as to what kind it is.

This is why the manual tells you to charge you fully for the very first time before use.

I don't think it's a good idea to interrupt the energy flow in midstream. I know that with cell phones it's a good idea to let them discharge fully, then charge completely; this may be the case with cameras as well. You should check the instruction manual that came with your camera.

Yes, it should be fine.. unless you have had trouble with the camera when doing it before. And of course, the batteries won't be fully charged.
