Congratulations and best wishes to you and your fiance. I hope you like this poem.
I will marry you in front of the world in front of no one at all,
I will love you in our bedroom the living room or hall
I will live with you anywhere, a mansion or a shack
I will go anywhere with you to the end of the world and back
I can stay awake and talk to you forever and a day
I can spend my life by your side and never go away
I can look into your eyes and see my future there
I can offer you my soul, with out worry or despair
I can tell you that I have always loved you,
I can tell you that I love you now more than words could ever express
I want you to be my husband you are the very best
I want to hold your hand forever and feel your caress
I want these things forever, eternally, with out end
I want to be your wife your lover and your friend.
I DO Love you always

Well, it depends on what you and he like, but you could check out some of Shakespeare’s sonnets, e.e. cummings, Walt Whitman, William Butler Yeats, or Elizabeth Barrett Browning. I won’t post all these actual poems, but here are some excerpts from a few that I really like.
From Sonnets From the Portuguese (#7) by Elizabeth Barrett Browning:
The face of all the world is changed, I think,
Since first I heard the footsteps of thy soul
Move still, oh, still, beside me…
I… Was caught up into love, and taught the whole
Of life in a new rhythm
From Sonnets From the Portuguese (#21) by Elizabeth Barrett Browning:
Say over again, and yet once over again,
That thou dost love me. Though the word repeated
Should seem “a cuckoo-song,” as though dost treat it,
Remember, never to the hill or plain,
Valley and wood, without her cuckoo-strain,
Comes the fresth Spring in all her green completed.
Shakespeare – Sonnet 116:
…Love is not love
Which alters when it alteration finds,
Or bends with the remover to remove.
Oh no! it is an ever-fixéd mark
That looks on tempests and is never shaken;
It is the star to every wandering bark,
Whose worth’s unknown, although his height be taken.
I would suggest going to a bookstore and finding a book of love poems. Flip through it and see if anything catches your eye! Good luck and congratulations!

I was just thinking write down all those things u love about him, and describe how he makes u feel-- then write down what u want in the future with him and explain why today is such an important day for you.
Does it have to be a poem? can u not just write him a short and sweet note with all those aspects in it?

Here's a couple and a link to lots more..
The Bargain
Sir Philip Sidney (1554-86)
My true love hath my heart, and I have his,
By just exchange one for another given:
I hold his dear, and mine he cannot miss,
There never was a better bargain driven:
My true love hath my heart, and I have his.
His heart in me keeps him and me in one,
My heart in him his thoughts and senses guides:
He loves my heart, for once it was his own,
I cherish his because in me it bides:
My true love hath my heart, and I have his.
You're The One For Me
Dallas Fisher
You're the one for me.
Your eyes are like fire on a cold winter's day
Your soul burns within me
Your touch blossoms my innermost passions
And your voice melts my heart.
You're the one for me.
You are the key to unlocking
My most sacred fantasies.
You're the one for me,
The one that wakens me
When I'm at my deepest sleep
With your passionate ways,
The one that rivets me with
Your beautiful, unique face.
You're the one for me.
You are the one that I want to share
My life, my love with for all eternity.
I will love you always and forever.
You're the one for me.
