Thinly sliced sun-dried tomatoes,
Strawberry Crasins (sorry if I spelled it wrong),
Fresh pomegranate seeds,
Hard-boiled egg quarters and crumbled bacon,
Sauteed sliced portabello mushrooms with crumbled goats-milk cheese,
Black olive slices and sliced pimentos
Any sliced or whole fruit - sliced strawberries, sliced seedless, peeled oranges, fresh raspberries, mulberries,etc. sprinkled with finely chopped Cilantro,
Whole blanched green beans, in a nice design (like the number sign), and roasted slivered almonds,
crushed unsalted peanuts with a sprinkle of chopped green chili, lime juice, and sour cream
Sorry - I could go on and on - use your imagination - anything is okay in a salad!

Here's a really pretty looking and great tasting salad, also very easy: Romaine lettuce, I like the red leaf because it's prettier,
One large can of pears, with syrup, drained
8 oz. cream cheese
3 Tablespoons milk
2 Tablespoons lemon juice.
Wash the lettuce and arrange in a bed on a salad plate, top with pear halves, two per plate,
In a food processor blend remaing ingredients until smooth. Add a pinch more milk if necessary. Add a healthy dollop to the tops of the pears, Chill and serve. Enjoy

For the middle of the summer, try topping your greens with some dried cranberries, a chopped apple, orange slices and very thinly sliced red onion. Dress it with a raspberry vinaigrette and decorate with a few colorful pansies (yes, they are edible, and they look SOOO pretty).

try radish roses, also you can use lemon or orange zest for color and flavor. using a mix of fresh veggies of all colors make it pretty. also good is cmall pieces og fried chicken ( like chicken tenders) with honey mustard dressing. Sometimes dressing it up abit of fruit is nice..also some cashews or any other nuts you like.

Use small metal cookie cutters to add shapes to your vegetables.
Then you can add dried cranberries / blueberries, nuts, crumbled asst cheeses.
