It needs to rest in the pan for at least 5 mins before you take it out or it will be too difficult to cool in the fridge. But if you let it rest, then put it on a wire rack and put it in the fridge for 1/2 hour, it should be ready to frost.

You can place the cake on a wire rack and place in the refrigerator -- NOT covered, it will sweat. Be careful not to leave in there too long, it will dry out quickly.

If you can take the hot cake out of the pan with out it breaking and crumbling....that's what I do. Let it sit for about 20 minutes than try carefully to get it out.

Cut it up and give me a couple pieces. This will let more air get at the remaining cake.
