CHERRY ALMOND STRUDEL SQUARES
1 (17.3-ounce) package frozen puff pastry sheets, thawed
2 (21-ounce) cans cherry pie filling
1 teaspoon almond extract
2/3 cup sliced almonds, toasted
1 egg
1 tablespoon water
Whipped cream, if desired
Separate pastry sheets. Cut one-third off each sheet. Press the two smaller pieces together to form one larger piece. Roll each piece, on a lightly floured surface, to form a 10 x 13-inch rectangle. Lay one piece in the bottom of a 13 x 9 baking pan that has been sprayed with non-stick spray.
Combine cherry pie filling and almond extract. Spread half of cherry mixture over pastry-lined pan. Repeat layers. Top with remaining pastry sheet. Roll out any scraps of pastry and cut with decorative cutters. Combine egg and water. Brush lightly over top of strudel. Decorate top with pastry cut-outs. Brush them with egg mixture. Cut several slits in top to let steam escape. Bake in a preheated 400-degree oven 35 to 40 minutes.
Serve warm with whipped cream, if desired.

Bombay Chicken With Almonds
Yield: 5 Servings
Ingredients
1 ts diet margarine
1/4 c chopped almonds
2 ts curry powder, divided
1 c diced, unpeeled apple
1/2 c chopped onion
1/2 c sliced fresh mushrooms
1 tb all-purpose flour
1 ts chicken bouillon granules
1 c boiling water
1/2 c skim milk
1 tb lemon juice
1 c chopped, cooked chicken
Instructions
Melt margarine in a large skillet over medium heat; add almonds. Cook
10 minutes or until almonds are golden brown, stirring frequently.
Sprinkle almonds with 1 teaspoon curry powder; toss lightly to coat.
Drain almonds on paper towels. Add apple, onion, and mushrooms to
skillet; saute 5 minutes. Stir in remaining 1 teaspoon curry powder
and flour. Cook over low heat 2 minutes, stirring frequently.
Dissolve bouillon granules in boiling water; add to skillet with milk
and lemon juice. Cook over low heat 5 minutes or until smooth and
thickened, stirring constantly. Add chicken; continue to cook over
low heat, stirring constantly, until thoroughly heated

My favorite salad is mixed greens or baby spinach with goat cheese, almonds, and pomegranite seeds. I dress it with a little apple cider vinegar, and finish with a little salt and pepper. You can substitute orange wedges or apples for pomegranite, but you can't substitute the almonds, because they're so tasty!
