Peel the eggs and chop them up. Add in the onion and celery. Stir in enough mayonnaise to moisten. Season to taste with salt and pepper.

Can also use a little curry to give it some zip.

8 eggs

2 tablespoons chopped pimento-stuffed green olives

DIRECTIONS:
Place eggs in a medium saucepan with enough cold water to cover, and bring to a boil. Cover saucepan, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel, and chop.
In a large bowl, mix eggs, mayonnaise, pepper, and paprika. Mash with a potato masher or fork until smooth. Gently stir in the olives. Refrigerate until serving.

Hard boil four organic free range eggs, allow to cool. Chop and mix with good quality mayonnaise, finely chopped onion and small chunks of tomato. Sprinkle with cayenne paper and chill.
Serve on a good rye or onion bread.

Okay, spread two slices of bread with low fat mayo, add some crispy lettuce, slices of boiled eggs, slices of tomatoe or cucumber. Close sandwich. Cut into 4 triangular shapes, remove crusts (if like) and hold together each one with toothpicks. Serve on plate. Serve with pickles.
