Olives, off the vine, come with a large, and very hard pit in them. When the pit is removed (to save you from breaking your teeth) there's a nice hole waiting to be filled with something, so some manufacturers stick a pimento in it. I've also seen nuts, pickles, and in one case, caviar.

More than 85% of stuffed olives, especially the green Spanish variety, are stuffed with pimento, while other stuffings; garlic, cheese, etc., make up the remaining percentage of preferred stuffings. That's just the way it's done i guess.

I am not sure why they are in there because I hate green olives!
Black olives - yum!

Because it's what's done,lol. Like someone else said,they also stuff them with almonds,garlic,and jalepenos,too, Whatever they put in them,I love them,just the same
